This sweet and refreshing homemade raspberry lemonade is the perfect drink for sipping under the summer sun. Using fresh British raspberries and lemon slices, this drink will be ready in no time. Although best served immediately, you can store the concentrate in the fridge for up to 5 days, then add the sparkling water and garnish when you’re ready drink.

Ready in: 20 minutes

Makes: 2 litres

Ingredients

For the raspberry concentrate
Zest of 4 lemons
Juice of 4 lemons
200g raspberries
125g caster sugar
350ml water

To serve
Lemon slices
Raspberries
A few mint sprigs
Ice
Sparkling water

Method

1. First, zest four lemons and then juice them into a medium saucepan. Add the raspberries, sugar, water and zest then place over a medium heat for around 10 minutes. Remove from the heat before it reaches the point of boiling.

2. Use a blender to blitz the mixture then pass through a sieve to remove any lumps. Set aside and leave to cool completely.

3. When you’re ready to serve, pour the raspberry concentrate into a jug and add more sparkling water, using the ratio 1/3 concentrate, 2/3 extra water. You can make it to taste too, adding more or less water depending on what strength you’d like the lemonade to be.

4. Pour the lemonade into serving glasses and add some fresh raspberries, lemon slices, mint and ice before serving, then enjoy.
