Welsh Rarebit

Rarebit is a simple but very delicious dish which takes classic cheese on toast to a whole new level. It is toasted bread covered in a mixture of melted cheddar cheese, mustard, spices and ale. Rarebit has been popular since the 1500s. In Welsh, it is ‘caws pobi’, which translates as toasted cheese. Pick up a truckle of Snowdonia Black Bomber Cheese with a Becketts Bakery bloomer loaf and make this speedy lunch or suppertime treat!

Ready in: 30 mins

Serves: 2

Ingredients

100ml ale

25g unsalted butter

25g plain flour

140g Snowdonia Cheese, coarsely grated

½ tsp English mustard

1 tbsp Worcestershire sauce

1 tbsp chopped chives

2 large slices Becketts Bakery bloomer bread

Method

  1. Heat the ale in a small saucepan and set aside.
  2. In another small saucepan melt the butter over a medium heat until it begins to bubble.
  3. Tip in the flour and cook for 1 min, stirring continuously to bring the butter and flour together.
  4. Whisk in the warm ale bit by bit to create a thick sauce then add in the grated cheese to create a thick sauce. Stir the mustard, Worcestershire sauce and chives.
  5. Heat a grill to its highest setting. Place the slices of bread on a baking sheet and grill on one side until toasted. Turn the bread over and spread each slice with the cheese sauce mixture. Place back under the grill and cook until golden brown and bubbling.
  6. Serve with a crisp green side salad.
