These beer-braised brisket burgers are sure to be a crowd pleaser. Braise the beef brisket in Gloucester Brewery’s award-winning Gloucester Gold beer and slow cook for a tender finish, full of flavour. Shred and serve in a burger bun with caramelised onions.

Serves: 6 – 8
Ingredients
1-1.5kg beef brisket joint
1 tbsp plain flour
2 tbsp oil
2 large onions, thinly sliced
3 garlic cloves, crushed
500ml Gloucester Gold beer
300ml beef stock
2 tbsp tomato puree
1 tbsp brown sugar
2 tbsp English mustard
1 tbsp Worcestershire sauce
1 sprig thyme
1 bay leaf
For the onions
2 onions, thinly sliced
1 tbsp butter
1 tsp brown sugar
To serve
Bread rolls
Lettuce
Method
1. Preheat the oven to 160C.
2. Season the brisket joint with salt and pepper then sprinkle with flour. Heat the oil in a large frying pan and sear the meat until browned on all sides. Place in a large heatproof dish with a lid.
3. Place the onions in the frying pan and cook for around 5-6 minutes or until softened. Add the garlic and cook for a further minute.
4. Pour the beer into the pan then stir in the tomato puree, mustard, sugar, Worcestershire sauce, beef stock, thyme and the bay leaf. Once combined, carefully pour over the beef and put the lid on.
5. Cook the beef in the oven for 3 ½ – 4 hours, until tender. Allow the beef to rest then shred with two forks and stir into the cooking sauce.
6. While the beef rests, prepare the caramelised onions. Melt the butter in a pan over low heat. Add the onion and cook gently for 8-10 minutes. Stir in the sugar and a pinch of salt then simmer for 10 minutes, until soft and sticky.
7. Finally, assemble the burgers. Cut the bread rolls in half and fill with lettuce, beef brisket and a spoonful of the sticky onions.
