These courgette and feta fritters are quick and easy to make in the air fryer. Serve with poached eggs for brunch or add to your picnic basket, along with a homemade lemon yoghurt dip. Very tasty, theyβre sure to be a firm favourite with the family.

Ingredients
3 courgettes, approximately 650g
75g feta
4 spring onions, finely sliced
15g parsley, finely chopped
10g dill, finely chopped
25g plain flour
1 egg
50g breadcrumbs
Vegetable oil, for air frying
For the yoghurt
300g natural yoghurt
1 lemon juice
2 garlic cloves
Salt and pepper, to season
Handful of mint leaves, chopped
Olive oil, to drizzle
Method
1. Coarsely grate the courgette and place in the large mixing bowl. Sprinkle with 1 tsp of salt, mix and set aside for 1 hour.
2. Tip the courgette into a colander and drain away any liquid. Place the courgette on a clean and dry tea towel, squeezing out any excess liquid. Wipe the bowl clean and return the courgette to it.
3. Next, crumble in the feta and add the spring onions, parsley and dill. Sprinkle in the flour and toss until combined. Finally, mix in the egg and the breadcrumbs. Form into around 8 round fritters and arrange onto a plate or tray. Brush each side with oil.
4. Preheat the air fryer to 180C. Place the fritters inside in a single layer and cook for 12 minutes. Turn over and cook for another 5 β 8 minutes. They should be golden and firm. If your air fryer is small, you may need to cook them in batches as itβs important to cook them in a single layer.
5. Finally, make the lemon-yoghurt dip. Crush the garlic with a little salt to make a paste. Add the yoghurt and lemon juice and stir well until combined. Spoon into a serving bowl and top with a drizzle of olive oil, the chopped mint leaves and a sprinkle of black pepper.
Enjoy the fritters with the yoghurt or serve with poached eggs.
