Beef Casserole with Kale Mashed Potato

This traditional beef casserole is filled with chunky root vegetables and rich gravy. Stewing steak can sometimes be tough, so slow cooking this dish guarantees a tender finish on the beef. This comforting dinner may seem rich but it’s actually quite healthy, especially when served with hearty kale and mashed potato. You can even keep any leftovers for lunch the following day.

Ready in:Β Maximum 9.5 hours

Serves:Β 4

Ingredients

650g Becketts’ Butchery stewing steak
2 tbsp plain flour
2 tbsp sunflower oil
1 Becketts’ Greengrocers root vegetable pack containing carrots, swede, onion and parsnip
2 cloves garlic
400ml beef stock
2 additional beef stock cubes, crumbled
2 tbsp tomato puree
2 tbsp Worcestershire sauce

For the kale mashed potatoes
500g potatoes
25g butter
4 tbsp milk
200g kale, trimmed and roughly chopped

Method

1. Coat the beef in plain flour until well covered. Heat the oil in a frying pan then add the beef. Cook for a few minutes, turning regularly, until browned.

2. While the beef is browning, peel and chop the carrots, swede, onion and parsnip.

3. Tip the beef into a slow cooker and top with all the other ingredients. Stir well and leave to cook on low for 8-9 hours or on high for 4-5 hours.

4. Stir well approximately one hour before serving and add some gravy granules or cornflour if you prefer a thicker gravy.

5. Around 20 minutes before serving, make the kale mashed potato. Peel and chop the potatoes and tip into a pan of water. Bring to the boil and cook for 15 minutes or until tender. Once cooked, drain and mash with the butter and milk.

6. In the meantime, add the kale to pan with 500ml boiling water. Cover and cook for 5 minutes.

7. Stir the kale into the mashed potato if you like or serve separately.

 

Top tip: For an extra tasty dish, swap the beef stock for the same quantity of ale.

Blend them into a tasty soup, roast and serve as a seasonal side or pop them into a casserole for a delicious, fuss-free family meal.
