Put a flavoursome twist on a classic cheese toastie with this chilli cheese naan bread and enjoy this British Sandwich Week. Made using a garlic naan bread, Indian spices and mango chutney, this delicious toastie is a must-try for lunch or dinner.

Serves: 2
Ingredients
100g Cheddar cheese, grated
100g mozzarella, grated or finely chopped
5 spring onions, thinly sliced
2 green chilli, finely chopped
1 tsp cumin seeds
1 tbsp coriander, chopped
2 large garlic naan bread (use plain if you’d prefer)
2-3 tbsp mango chutney, plus extra to serve
20g butter
Method
1. In a large bowl, mix together the cheeses, spring onion, chilli, cumin seeds and coriander.
2. Spread the mango chutney over half of each of the naan breads. Split the cheese mixture in two and sprinkle over the mango chutney. Fold the naan bread over to cover the cheese and chutney. If it’s easier, cut the naan bread and place over the top.
3. Place the butter in a frying pan and melt over medium heat until it just begins to foam.
4. Add the naan sandwiches to the pan and press down. Fry on each side for around 4-5 minutes, or until golden brown and crispy. The cheese should be melting.
5. Once cooked, remove from the pan and cut in half. Serve with an extra dollop of mango chutney.
