These child friendly sausage rolls are filled with hidden veggies, which is perfect for those fussy eaters. This easy-to-follow recipe means you can even get your little ones involved with the cooking too!

Ingredients
1 tsp oil
1 medium courgette, grated
1 large carrot, grated
ยฝ small broccoli, grated
1 clove garlic, crushed
450g Beckettsโ Butchery sausages, skinned
1 sheet ready rolled puff pastry
1 egg, beaten
Method
1. Pre-heat the oven to 180C and line a baking tray with parchment paper.
2. Heat the oil in a frying pan and add the courgette, carrot, broccoli and garlic. Cook on a low heat for around 5 minutes, or until softened.
3. Once cooked, tip the vegetables into a large mixing bowl and add the sausage meat. Mix well and set aside to cool.
4. Take your sheet of puff pastry and cut in half lengthways so that you have two rectangular pieces. Spread the sausage meat down the middle of each pastry sheet, leaving a gap of 1cm either side. Roll the pastry over so that the two edges meet and press down with a fork to seal.
5. Cut into 8 sausage rolls, or 16 smaller ones if you prefer. Place the sausage rolls onto the baking tray and brush with a little beaten egg.
6. Cook in the oven for 30-35 minutes until golden brown and cooked through. Store in the fridge once cool and consume within 3-5 days.
Tip: You can make these sausage rolls ahead and freeze them. Follow the instructions above, but instead of egg washing and baking, pop them inside a food container on a single layer. When ready to cook, bake from frozen. Place the sausage rolls on a baking tray, egg wash and bake for 40-45 minutes.
