Use just a handful of ingredients to create these fuss-free honey mustard chicken thighs. Sweet honey and tangy mustard make a delicious glaze for chicken. These tender chicken thighs make a tasty midweek dinner, especially when served mashed potato and seasonal vegetables.

Ingredients
8 bone-in chicken thighs
85g honey
60g wholegrain mustard
2 garlic cloves, crushed
1 tbsp olive oil
1.5 tsp fresh rosemary, finely chopped
1.5 tsp fresh thyme, finely chopped
Salt and pepper, to season
Method
Preheat the oven to 180C. Place the chicken in a baking dish, skin side up. Pat the chicken dry with a paper towel.
Place the remaining ingredients in a small bowl and mix together until combined. Season with salt and pepper and stir again.
Spoon the glaze over the chicken and gently rub into the skin.
Bake in the oven for 40-45 minutes, until the chicken is fully cooked. Turn the grill up for the final few minutes of cooking time to allow the skin to crisp up.
Serve with mashed potato and seasonal vegetables for a hearty family dinner, or with some wholegrain rice for a speedy alternative.
Top tip: If you don’t have fresh herbs, use 1 tsp of each dried herb instead.
