This spiced Christmas crumble is made with apples, cranberries and a hint of mixed spice. Serve warmed with custard or a generous helping of vanilla ice cream. You can always make ahead of time and pop it in the freezer, then bake from frozen for the ultimate comforting dessert.
Ready in: 1 hour
Serves: 4- 6
Ingredients
For the filling
1kg apples
150g frozen cranberries
1 tsp ground cinnamon
½ tsp mixed spice
75g caster sugar
For the crumble topping
125g plain flour
100g cold unsalted butter, cubed
50g caster sugar
½ tsp mixed spice
Method
1. Heat the oven to 200C. Peel, core, and chop the apples into even pieces. Tip the apples into a saucepan with a splash of water, the sugar and mixed spice. Cover the pan with a lid and cook on low-medium heat for 5 – 10 minutes until the apple pieces have softened slightly, stirring occasionally.
2. Once the apple has softened, pour it into a baking dish. Tip in the cranberries and mix well to combine, then set aside.
3. Next, make the crumble topping. Rub the flour and butter together using your fingertips until they resemble breadcrumbs. Stir in the sugar and mixed spice.
4. Sprinkle the crumble in an even layer on top of the fruit. Bake in the pre-heated oven for 25 – 35 minutes until golden on top and bubbling around the edges.
5. Serve warm with your choice of cream, custard or ice cream.
