This spiced marmalade and fruit loaf is simple to make and is deliciously moreish. The lightly spiced notes are wonderfully warming, making it the perfect seasonal bake. The cake keeps well too and can be frozen. You can vary the marmalade that you use. Why not try removing the spice and choosing the marmalade with whisky from Mrs Darlington’s!
Ingredients
250ml of water
225g sultanas
50g butter
300g self-raising flour
200g soft brown sugar
Pinch of salt
1tsp mixed spice
2tbsp of Mrs Darlington’s Orange & Ginger Marmalade
2 large eggs, beaten
Method
1. Pre-heat the oven to 180C.
2. Grease and line a 2lb loaf tin.
3. Put the water, sultanas, butter and marmalade into a pan and bring to the boil. Boil for a couple of minutes, then leave to cool completely.
4. Add the sugar and eggs to the cooled liquid, stirring until well combined.
5. Stir through the flour, mixed spice and salt.
6. Bake for approximately 45 minutes to an hour (until a skewer placed in the centre comes out clean).
7. Leave to cool in the tin before slicing.
