This decadent banoffee-nut dessert recipe is put together in just 10 minutes, using just a handful of ingredients. Youโll want to make sure youโve picked up some of the delicious Bennettโs Farm Toffee Ice Cream from our Farm Shop, along with some Caramel Meringue Clouds, available in store too. Then stack the โsandwichโ with a speedy, homemade caramel peanut sauce, fresh banana and generous scoops of the real dairy ice cream.

Ingredients
2 Flower and White Caramel Meringue Clouds
150g ready-made caramel
40g peanut butter
50ml milk
Bennetts Farm Toffee Ice Cream
30g salted peanuts, crushed
2 small bananas, sliced
Method
- Start by making the peanut caramel sauce. In a pan over a gentle heat melt together the caramel, peanut butter and milk until smooth. Remove from the heat and leave to cool slightly.
- Carefully slice open the meringues in half, lengthways.
- To build the ice cream sandwich, spread a swirl of the caramel peanut sauce onto the base of each meringue. Next layer over the banana slices. Add a scoop of ice cream and drizzle over the remaining caramel peanut sauce. Sprinkle over the crushed peanuts. Add the lid of the meringue to finish.
