These tasty cheesy cauliflower fritters are low carb and gluten free. They make a great substitute for potatoes to make a delicious brunch. Even the kids will love them!
450g Cauliflower florets
200g Grated cheddar cheese
2 Large eggs
2 tbsp coconut flour
1 finely chopped spring onions
Olive oil (for cooking)
Shred the cauliflower with a large cheese grater and steam until tender.
Mix the cheese in with the cauliflower whilst the cauliflower is still hot. Keep mixing until the cheese is melted in evenly.
Add in the eggs, coconut flour and spring onions. Mix until everything is combined.
Use 1/4 cup (4 tablespoons) to scoop the cauliflower batter. Flatten with the back of a spoon.
Add 2 tbsp of olive oil to a non stick pan and bring to a medium heat. Drop the cauliflower batter into the pan and press down to form a disc shape. Cook on each side for a few minutes until lightly browned and crispy.
Repeat the process with the remaining batter, adding more olive oil to the pan if needed.
Add sour cream and spring onions to your cheesy cauliflower fritters for a tasty brunch.
