These delicious fresh British Cherry and Chocolate Chip Blondies are the perfect afternoon treat served with a hot drink or a great teatime dessert served warm as a pudding with a scoop of ice cream. Tag @beckettsfarm in your creations.
Makes; 16
Ready in; 60 minutes plus cooling time
Ingredients
150g unsalted butter
225g light brown sugar, packed
2 large egg
2 teaspoons vanilla extract
125g plain flour
1/4 teaspoon salt, optional
200g chocolate chips
200g fresh cherries
½ tsp baking powder
Method
Pre-heat the oven to 180°C, fan 160°C, gas 4 and line a 20cm square tin with baking paper.
Using a microwave, melt the butter in a microwavable bowl for around 60 seconds.
Once melted add the sugar and stir to combine. Add in the whisked eggs and vanilla and stir. Sift in the flour, baking powder and salt and fold together until just mixed. Fold in the chocolate chips and pour the mixture into the prepared baking tin. Add the cherries (don’t forget to de-pip them) to the top of the mixture and push them gently in to the mixture.
Bake for 40-45 minutes until golden brown and set on top, but still with a bit of a wobble – Blondies should be fudgy in the centre, so take care not to over bake.
Remove from the oven and cool in the tin. Cut into squares to serve, decorated with any extra cherries or a drizzle of chocolate if you wish.
