Gently spiced, this flavoursome chilli roast chicken makes a great mid-week meal and can be served in many different ways. We suggest serving with our one-pot spicy rice for a deliciously hearty evening meal. Keep any leftover chicken to pop in a pitta with salad for lunch the following day.

Serves: 4 – 6
Ingredients
1 large whole chicken (approx. 1.5kg)
1 bottle of Yorkshire Rapeseed Oil Chilli & Spice flavour (you need around 5 tbsp)
200g basmati rice
1 large onion, peeled and chopped
2 garlic cloves, peeled and sliced
1 thumb-sized piece of ginger, peeled and chopped
2 whole cloves
1 cinnamon stick
2 cardamom pods, cracked
1 ½ tsp medium curry powder
50g frozen peas
50g frozen sweetcorn
375ml stock (we recommend chicken)
Method
1. Preheat the oven to 200C. Place the chicken in a large roasting dish and drizzle with around 4 tbsp of Yorkshire Rapeseed Oil’s chilli and spice oil. Place in the oven and cook for 40 minutes per KG, plus an extra 20 minutes. For a 1.5kg chicken, the cooking time will be 80 minutes. If the chicken begins to brown too quickly cover with foil.
2. While the chicken is cooking, make the rice. It will take around 15 minutes to prepare and 30 minutes to cook.
3. Rinse and soak the rice in water for 10 minutes. Heat a large ovenproof saucepan before adding 1 tbsp oil, the onion, garlic and ginger. Cook on a low heat until the onion softens.
4. Next, add the cloves, cinnamon and cardamom pods and cook for a further 2-3 minutes. Finally, add the curry powder and cook for a final 2 minutes, then stir well.
5. Drain the rice and add it to the saucepan. Stir well so that the rice is covered in the oil and spices. Add the peas and sweetcorn before pouring in the stock. Stir well.
6. Cover the pan with a lid or foil then cook in the oven for 15-20 minutes. Remove from the oven along with the cooked chicken. Slice the chicken and serve with a portion of rice.
