This hot honey-glazed gammon is great for levelling up your Boxing Day joint. Enjoy it as an accompaniment to your Christmas Day roast dinner, and the leftovers can be enjoyed with pickles or in a sandwich over the following days. Covered and refrigerated, the cooked gammon will keep for up to four days.

Serves: 6 – 8
Ingredients
2.5kg gammon joint
2 onions, skin on and halved
2 bay leaves
1 thyme sprig
2 carrots, peeled and chopped
6 cloves
8 black peppercorns
For the glaze
100g BB&H hot honey – we recommend using Ghost Chilli
1-2 tsp chilli flakes
Method
1. Place the gammon and all the ingredients (except those for the glaze) in a large, deep saucepan. Cover completely with cold water and bring to the boil. Once boiling, reduce to a simmer and allow to cook for 1 hour. Turn off the heat and leave to sit for further hour, with the lid still in place.
2. Remove the gammon from the pan and set aside to cool. Transfer the stock into a freezer-proof jar, freeze and use as a soup base another time.
3. Pour the hot honey and chilli flakes into a small pan. Heat gently, stirring continuously until fully mixed and gently bubbling. Remove from the heat and set aside.
4. Once the gammon has cooled enough to handle, peel away the skin on the top of the joint, leaving the fat remaining. Score the fat with a sharp knife in a criss-cross pattern.
5. Heat the oven to 200C and line a large roasting tin – one big enough to hold the gammon joint.
6. Place the gammon joint in the lined tin. Cover with the hot honey glaze, holding some back for later. Roast in the oven for 25 minutes, glazing a little more halfway through. Once cooked, it should be golden, sticky and slightly charred. Remove from the oven and glaze for a final time. Allow to rest for 20 minutes before carving and serving.
