Baking a batch of these tasty biscuits is sure to get you in the festive spirit. Gently spiced, these cookies are perfect for enjoying with a cup of tea. Pop them in the treat tin at home or gift wrap and pass them on to a loved one to enjoy. You can even use Christmas-shaped cutters and get creative with the decorating too!

Makes: 15 – 20 biscuits
Ingredients
100g butter, at room temperature
50g caster sugar
1/2 tsp ground cinnamon
1/2 tsp ground ginger
150g plain flour
1 tbsp cornflour
For the icing / decorating
150g icing sugar, sifted
2-3 tbsp lemon juice or water
A selection of edible sprinkles, glitter, crushed candy canes etc. to decorate
Method
1. Preheat the oven to 180C and line two baking trays with parchment paper.
2. Place the butter, sugar, cinnamon and ginger in a large mixing bowl and whisk together using an electric whisk until light and fluffy. Add the flour and cornflour then use a wooden spoon to combine. Stir until the mixture resembles breadcrumbs then use your hand to form a ball of dough.
3. Lightly dust your work surface and a rolling pin with flour and roll the dough out to approximately 5mm thick. Use biscuit cutters to cut out shapes, re-rolling any leftover dough as you go. Place the biscuits onto the prepared baking trays.
4. Bake in the oven for 14-16 minutes, swapping the trays around halfway through to ensure they are cooking equally. Once cooked, the biscuits should still be slightly pale. Leave on the trays to cool completely.
5. In the meantime, mix together the icing sugar with 2 tablespoons lemon juice, adding the extra tablespoon if required.
6. When the biscuits have cooled, pipe or spoon the icing over each biscuit, followed by any additional decorations if you’d like. Allow the icing to set before storing in an air-tight tin.
