Ready in: 45 minutes
Serves: 4
Ingredients
4 boneless pork loin steaks, trimmed of any fat
1 large red onion, cut into wedges
4 Bramley apples, cored and cut into eight
2 tbsp redcurrant jam
200ml chicken stock
1 tbsp red wine or cider vinegar
2 tsp Chinese five-spice seasoning
1 tbsp sunflower oil
Method
1. Dust the pork steaks with the Chinese five-spice seasoning. Heat half the oil in a frying pan and fry the pork for around 3 minutes on each side, until browned and cooked through. Transfer to a plate and set aside.
2. Add the remaining oil to the frying pan, reduce the heat slightly, then fry the onion wedges for 2 minutes. Add the apples and cook, stirring occasionally, for another 3-5 minutes.
3. Next, add the redcurrant jelly to the pan, followed by the vinegar and the stock. Bring to the boil and simmer, uncovered, for 8-10 minutes. The sauce should turn slightly syrupy and the apples soft and tender. Gently reheat the pork in the sauce, turning to glaze each side.
4. Serve the pork steaks with mashed potatoes, before topping with the apples and drizzling over the remaining sauce.
