Do you have a Traditional Christmas Pudding for dessert on Christmas day? Wow the family this Christmas by making your very own table centre piece from scratch in this easy to follow recipe.
Ingredients
1 Cup Raisins
1 Cup Sultanas
1 Tsp Ground Cinnamon
1 x Cup Self Raising Flour
115g Finely Grated Butter
Fresh Brown Breadcrumbs (Around 4 Slices)
1 Cup Light Muscovado Sugar
1 Large handful of Mixed Nuts, Chopped
1 Tsp Ground Mixed Spice
1 Standard Cup Milk
1 Large Egg
Butter, for greasing
For the Butterscotch Sauce
85g Butter
100g Light Muscovado Sugar
200ml Double Cream
1 Tsp Vanilla Extract
Method
Empty the cups of raisins, sultanas, self raising flour, grated butter, breadcrumbs, muscovado sugar and nuts into a mixing bowl and add the spices. Stir well before adding the milk and egg and combine all together before tipping into a buttered 1.5 litre pudding bowl.
Cover with buttered foil making a pleat in the centre to allow for the pudding to rise. Tie the foil securely and place in a steamer. Steam, covered with a lid for 2.5 hours.
Leave to cool slightly if serving immediately.
For the Butterscotch sauce –
Put all the ingredients in a pan and slowly bring to the boil whilst stirring. Let it bubble away for 3 minutes, still stirring until the sugar has dissolved and the sauce is a pale caramel colour. Remove from the heat and pour over the pudding.
Put the Traditional Christmas Pudding in the middle of the table as a fab dessert centre piece!
