These garlic roasted new potatoes make a flavoursome accompaniment to such a wide range of main dishes.
Our ultimate favourite is crisp roasted chicken, fresh green veg and these beautiful golden potatoes, served with lashings of gravy. Why not pick some Cornish potatoes from the Greengrocers, which are in season this month.
Serves: 8 people as a side
Cooks in: 1 hour
90g small Cornish Potatoes
60ml rapeseed oil
11/2 tsp salt
1 tsp freshly ground black pepper
2 tbsp garlic (approx. 5 large cloves), crushed
2 tbsp fresh parsley, finely chopped
1) Preheat the oven to 200⁰C
2) Cut the potatoes in half and place in a bowl with the oil, salt, pepper, and garlic; toss until the potatoes are well coated.
3) Transfer the potatoes to a baking dish and spread evenly. Roast in the oven for 45 minutes or until golden and crisp. Turn the potatoes twice with a spatula during the cooking time to ensure that they are golden all over.
4) Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.
Top Tip: Serve alongside hot or cold roast chicken, with buttery greens or salad.
