Rhubarb season has officially begun and our latest recipe is a really simple, yet satisfying project for spring.
Take a recipe card and pick up the ingredients to make your very own homemade rhubarb gin or vodka, perfect for springtime sipping. It can be decanted into small, pretty bottles for Easter gifting too – chocolate versus gin, now there’s a dilemma!

Ingredients
1kg rhubarb stalks
400g caster sugar
800ml gin or vodka
Top Tip – Choose the pinkest rhubarb stalks you can find to help make your gin/vodka a lovely pastel pink colour
Method
- Wash the rhubarb and discard any leaves. Cut the stalks into 3cm pieces. Put the rhubarb in a large jar with the sugar. Close the lid and give everything a good shake. Leave for 24 hours to macerate. The sugar will draw the juice from the rhubarb and will have turned syrupy.
- Add the gin or vodka, then seal and shake again. Leave for about 4 weeks before drinking, no need to store in the fridge, the kitchen side is fine so long as it isn’t too warm or in direct sunlight. Once the 4 weeks have passed your gin/vodka is ready for drinking. You can either strain through a sieve lined with a muslin cloth or coffee filter, or alternatively you can leave the macerated rhubarb pieces in the liquid which will have soaked up lots of the alcohol and sugar to make the perfect garnish. Decant the gin/vodka into sterilised glass bottles, and decorate for gifting, or pour and enjoy yourself.
Top Tip – Why not try adding different flavours to compliment the rhubarb? You can add 2-3 small pieces of unpeeled fresh ginger as well as the rhubarb in step 1 for rhubarb and ginger gin. Or try 300g mixed berries with the rhubarb for extra fruity flavour.
