Small handful chopped fresh flatleaf parsley
1 large pickled gherkin, finely chopped

Method
Place all the ingredients for the burgers in a large bowl. Season and mix well. Cover and chill in the fridge for 1 hour.
Pre-heat the BBQ and using wet hands, shape the mixture into 8 burgers. Brush both sides of the burgers with a little sunflower oil and cook for 3-4 minutes either side until cooked.
Just before they are ready to serve add a slice or two of Fowlers Cheddar cheese to the top of the burgers, so it melts a little.
Slice the bread rolls, add a spoonful of Charlie & Ivyβs chipotle mayonnaise onto the base of the bread bun. Add some tomato, lettuce, then the burger and sprinkle on some red onion. Top the burger with the other half of the bun and ENJOY!
