Tomato and Basil Bruschetta

This simple Tomato and Basil Bruschetta recipe is the perfect Summers treat. Enjoy as a light lunch or treat your family to an Italian themed dinner and use as a starter. Tomato and Basil Bruschetta, a glass of refreshing wine and sunshine in the garden sounds like the perfect setting right now.

Between 25th May -7th June the British Tomato Growers Association celebrate British Tomato Fortnight. Here at Becketts, we believe British-grown tomatoes are something to celebrate. British tomato growers supply about 92,000 metric tonnes per year to British consumers – about a fifth of the total volume of tomatoes sold in the country through the year, and up to a half in the summer.

Makes; 12

Ready in; 60 minutes

Ingredients

Β½ small red onion, finely chopped

8 medium Evesham tomatoes (about 500g), chopped and drained

2-3 garlic cloves, crushed

6-8 leaves of fresh basil, finely chopped

30ml balsamic vinegar

60-80ml extra virgin olive oil

1 Becketts French stick

Method

Add the onions, tomatoes, garlic, and basil to a large bowl. Mix together taking care not to mash or break up the tomatoes too much. Add the balsamic vinegar and extra virgin olive oil and salt and pepper to taste. Mix again. Cover and chill for at least an hour, this will help the flavours blend together.

Slice the French stick diagonally into 12 thick slices and lightly toast them until they are light brown on both sides. Serve the mixture on the warm slices of bread.
