Thereโs nothing quite as refreshing as this delicious Blackberry Virgin Mojito. Made with fresh lime and mint, the basis of a classic mojito shines through in this non-alcoholic version. Itโs just as tasty and has a tang of seasonal blackberries which will have you dreaming of hot summer days.
Store any leftover syrup in the fridge for up to 1 week for another batch or a homemade mint lemonade.

Ingredients
For the syrup
15g fresh mint leaves
200g caster sugar
240ml water
For the remainder of the drink
150g blackberries
1 tsp caster sugar
120ml lime juice

Method
1. Crush the mint leaves in a pestle and mortar, or in a small bowl with a wooden spoon if you donโt have one.
2. Tip the crushed mint leaves into a saucepan along with the sugar and water and bring to the boil over a medium heat, stirring occasionally to help the sugar melt. Once the sugar has melted, allow the mixture to boil for 3 minutes. Cool to room temperature then strain the mint out of the syrup, pressing the liquid out of the leaves as you go.
3. Next, add the blackberries and teaspoon of caster sugar into a bowl and mix together, crushing the blackberries.
4. Divide this into 4 glasses and add 2 tablespoons of the syrup and lime juice to each. Fill the glasses with ice and top with sparkling water. Garnish with any leftover mint leaves and enjoy.
