Our Greengrocers have a lovely stock of English Celeriac. Try this summery recipe for a crunchy coleslaw. Perfect with BBQs and salads.
Cook in: 15 minutes
100g carrot, grated
200g red cabbage
50g red onion
50g white onion
2 green apples (unpeeled)
100ml Mrs Darlington’s Traditional Mayonnaise
100ml Mrs Darlington’s Blue Cheese Mayonnaise
Salt and pepper
Thinly slice the red cabbage, celeriac and onions and add them to a large bowl. Add the grated carrot.
Grate the apple and add to the bowl. Squeeze lemon juice over it to stop the apple from browning, and mix all the above together.
Add both of the Mayonnaises and stir through to bind the vegetables together.
Add salt and pepper to taste. Serve the coleslaw immediately or keep in the fridge for up to three days.
