Tender stem broccoli is a sweet, crunchy, vibrant veg that is easy to love and is packed full of so many nutrients and vitamins. It can be cooked in a variety of ways including this tender stem broccoli and bacon quiche and pairs well with almost anything.
The key to making a perfect quiche is simplicity, which you will find with this recipe. Quiche with tender stem broccoli and bacon lardons makes a tasty snack or served with sides can make a simple evening meal.
Ingredients
500g Shortcrust pastry
1 tbsp Olive oil
100g Bacon lardons
1 Garlic clove, finely chopped
350g Tender stem broccoli
4 Free range eggs
200ml Double cream
Salt and cracked black pepper
Method
Preheat the oven to 200°C/ gas mark.
Roll out the pastry and line a 16cm tin. Prick the base of the pastry and chill in the fridge.
Heat the oil in a small frying pan, add the lardons and cook until almost crisp. Add the garlic and cook for another 30 seconds. Remove from the heat and leave to cool slightly.
Sprinkle lardons and garlic over the base of the pastry. Fill the case with Tender stem.
Beat the eggs, cream and season with salt and pepper. Pour the mixture into the case.
Bake in the middle of the oven for 45 minutes or until set.
Serve warm.
